I made

THE BEST tomato pie the other day - 
And it's one of the simplest things to make, really.
I'm sure I've shared my 'recipe' before...
Take a frozen pie shell and layer fresh basil leaves all over the bottom. 
Add sliced tomatoes on top of that.
Then mix together  3/4 cup [or so] of mayo 
[y'all know I'm a Blue Plate girl!] 
with some grated parmesan cheese
[I prefer the course/ shaved texture, but used the powdery stuff I had left in a jar in  the fridge... ]
Bake at 350* until done.
